Recipe:
3 large, ripe peaches, sliced
1 tablespoon local honey (lavender if you can find it but any honey is fine)
2 cups bourbon of your choice
Handful of thyme (about 12 – 15 sprigs)
3-4 heads of lavender
Place the peaches in your pretty jar. Tuck all but one sprig of thyme and one head of lavender into the jar so it can be seen from the side. Add honey on top. Pour bourbon in so that it leaves about and inch at the top. Close and shake well. Reopen and garnish the top with the last of the lavender and thyme. Store in a cool dry place for 10-14 days. You may takes sips to see how strong the flavor is. Strain out the peaces, lavender and thyme and return the bourbon to the container. This will keep for up to a year in the fridge. Enjoy!
